Fruit Stew

1 cup sliced avocado
½ cup pineapple
½ cup sliced plantain
½ cup sliced apple
½ cup raspberries
½ cup blueberries
2 cups orange juice
½ cup lemon juice
½ cup pitted dates
1 cup frozen strawberries

Step 1) Mix fruit in bowl.

Step 2) Blend orange juice, lemon juice, dates and frozen strawberries. Pour over fruit and enjoy.

Suggestion: This is really good with a bit of sprouted wild grain rice and a minced jalapeno pepper in the mix.

Rainbow Fruit Kabobs

4 cups strawberries
1 pineapple
6 kiwis
2 cups blueberries

Step 1) Cut strawberries in half, the pineapple into chunks, and the kiwis into fourths.

Step 2) On a skewer, place first a strawberry, then a pineapple chunk, next a kiwi coin, and finally a blueberry. Repeat this until the skewer is full of fruit.

Have children make these on a rainy day with Ants on a Log; also a fun (and yummy!) “craft” for a children’s party. Connect them to their food.
