Cocoa-nut Macaroons

2 cups raw almond meal
2 cups raw coconut shreds (unsweetened and unsulfured)
½ cup maple syrup
¼ cup raw cacao powder or nibs

Step 1) Mix all ingredients together in a bowl; it should be somewhat tacky to the touch, but not gooey. Add more of any of the dry ingredients if it’s too gooey.

Chocolate Almond Truffles

1 cup almond meal
½ cup almond butter
½ cup raw cacao powder
¼ cup grade B maple syrup (or coconut nectar)
1 tsp. vanilla
Sea salt to taste

Step 1) Mix all ingredients (except half of the cacao powder, you will save this for later) well until you have the truffle “dough”.

Step 2) Roll dough into ping-pong ball sized truffles. Dust with the cacao powder by putting the remaining powder on a plate and rolling the truffles around on it.
