Dirty Rice and Beans, Superfoods Style!

No wild horse sightings yet! We will find them though. We are getting much closer. We went exploring Currituck Sound via the northernmost aspect of the outer banks yesterday. We hiked the dunes throughout the maritime forest there. The forest is amazing, old souls abound for sure. It is principally dominated by live oak and southern bayberry interspersed with loblolly pine. We hiked throughout and tracked a wild horse harem band for a few miles but we didn’t catch sight, only hoof marks and horse poop! After all that hiking we returned to our place where I whipped up my world famous sprouted black bean and sprouted brown rice in the form of Dirty Rice and Beans (pg 140, Tropical Rice and Beans with a Twist). We ate them with sprouted corn tortillas and grilled portobella mushrooms and poblano peppers. Yum!
Now, we are off to kayak the sound. We figure we are bound to see some horses running the dunes from the water.
