Gazpacho Goodness Galore!


After Tai Chi and trail running, here’s dinner. Yum! Gazpacho is one of my summertime favorites for sure. Throw in the sprouted sunflower, flax and rye seed crackers to spread Walnut Pate (pg 147), Pesto (pg 128-129), or a fusion of them both (as you see here), and you have a delectable array sure to tantalize even the most sophisticated (and healthful!) palate. Look who showed up for dinner!
