Yum! Greens and Beans (pg 121) are one of my favorites for sure. Here is the twist: start with a drizzle of extra virgin olive oil (just a drizzle), an onion, lots of garlic and tomatoes, and a few Don Enrique Japones for some heat! Simmer this brew on low heat, adding a pinch of mineral sea salt and a bit of fresh cracked black pepper to taste. Then, once the flavors coalesce in the sauce, you add the cannellini beans (sprouted of course!) at the end (just enough to warm them) and add the spinach at the very end just prior to serving (to wilt ever so slightly). Spoon this deliciousness over sprouted quinoa or fresh spring greens (perhaps drizzled with a bit of balsamic like I did) and enjoy!
